Sometimes you whip up a meal, thinking you have a rough idea of how it’ll turn out. But this one? Total surprise victory! It was a last-minute, “let’s keep it simple” idea that turned out to be absolutely mouth-watering.
Why’s it called the “BIG” Mexican Bowl? Well, for one, it’s huge—perfect for big appetites or for splitting in half if you’re looking for a lighter portion. (Seriously, most people don’t need a full 1300-calorie serving, but it’s there if you do!)
The BIG Mexican Bowl Grocery List (for two big eaters)
• 3 lbs Trader Joe’s ground chicken
• 2 cans black beans
• 5 ripe avocados
• 16 oz Wisconsin sharp cheddar cheese
• 2 packs Frontera Chicken Taco Skillet Sauce
• 10 cups cooked white rice
• Trader Joe’s Sour Cream
• Trader Joe’s Salsa Especial
Cooking Instructions
1. Cook the ground chicken in a skillet over medium heat.
2. Once it’s browned, add the beans and your favorite Mexican seasoning.
3. Simmer for about 5 minutes to reduce the liquid.
4. Store the chicken mixture in a big glass container in the fridge; each night, just add the fresh ingredients to make it quick and easy.
Pro Tip: Prep the avocados, cheese, and rice fresh each night for the best flavor. (Rice in the Instant Pot takes about 15 minutes and makes this even easier!)
Serving Instructions
1. Cook the rice in a rice cooker or Instant Pot.
2. Add 1/10 of the meat mixture to a big bowl.
3. Chop 1/2 avocado and toss it in.
4. Grate 1/2 cup of cheddar and mix it all together.
5. Add the rice to your bowl and stir it up—that mix is key to getting all the flavors blended just right.
